Winemaking - A Balance of Tradition and Innovation: The winemaking philosophy at La Vieille Ferme is centered around minimal intervention, allowing the natural characteristics of the grapes to shine. Each variety is vinified separately to preserve its unique flavors before being carefully blended to create wines that are harmonious and expressive. For the white and rosé wines, fermentation takes place in temperature-controlled stainless steel tanks to enhance freshness and aromatic intensity.
